10 Favorite Summer Salads

We’ve still got your back this summer with these 10 salads to simply throw together. The vegan community is overflowing with amazing recipes. We are so grateful to be a part of it!

I (Kendra) grew up having a garden side salad every night for dinner. It was actually the only thing that I could make by the time I was in College and had moved out of the house. I usually liked them without dressing, which to me now is not appetizing at all. I have my salads now with balsamic vinegar and olive oil but I’m thinking of trying to find a yummy vegan ranch dressing. Here are some delicious options for you this summer, or any time of the year really!


Strawberry Mâche Salad


Said, “Mah-sh”, this “French edible green salad” is the perfect summer dish. I absolutely love strawberries in a salad. Mâche is also “lamb’s lettuce”, but you can substitute it for an arugula/spinach mix. Voilà!


Thai-Inspired Hydrating Cucumber Salad with Roasted Spiced Chickpeas


This “Oh She Glows” recipe is so simple and fresh. You only need to turn the oven on for the chickpeas and that’s it! The dressing has 3 simple ingredients – the only one you might need to add to the shopping list is the rice vinegar.


Greek Pasta Salad with Tofu Feta Cheese


This is going on the meal plans for next week, what a light but hearty meal. I can’t wait to try the tofu feta cheese. If you are in a time crunch, you can just simply add baked tofu that’s ready to go. Also you can use whatever noodles you want! These spirals do look amazing though! This recipe serves 6 as a main or about 10 side salads. That’s some great leftover packed lunches right there!


Smoked tofu apricot salad


Who’s idea was it to put fruit in a salad, ’cause they are a genius. Also dried fruit = the bomb! Enjoy.


Southwestern Quinoa Salad with Creamy Avocado Dressing


They had me at “Avocado dressing!” This one packs a good punch in terms of being filling. The quinoa really adds some substance. It’s not just plain old leaves here folks.


Raw Phad Thai


I wish I could eat this, but my pregnancy has caused me to have a huge aversion to peanut or almond sauces. I still love peanut butter which is weird. Go and enjoy this for me, and I’ll try it again after baby arrives. Don’t they say some aversions just never go away?


Green Bean and Mango Salad


Ensley loves her “Forks over Knives” cookbook that we talked about here last week. This Green Bean and Mango salad won’t disappoint. Finding a good mango has been tricky for me though. Anyone know a good place (around the Charlotte area) to get some juicy mango?


Southwestern Black Bean Salad


This recipe is perfect as a salad, or squeeze these into a pita pocket or tortilla and you are all set. Do almost all these recipes have avocado…..the answer is yes. Hehe. And get this, 4 years ago I didn’t eat avocado! The horror! (Said in the Sue Sylvester voice from “Glee”)


California Caesar Salad


Jessie Snyder from “Faring Well” is one of the cutest humans. Her Instagram (@_faringwell) stories are literally so sweet and she has the most amazing tips and recipes. Her photos are incredible, and her kitchen is our future kitchen goals for sure! This recipe requires a little more prep and time but it’s totally worth it!


Summer Panzanella with Sourdough Croutons


You’ll find this on right here at Rebelle Kitchen. It’s our most famous dish so far…really! It’s been on TV, so check it out on Charlotte Today. These homemade croutons are the absolute best and they are so easy to make. This is on my meal plan every week till Winter.

Also – most of these can be made ahead of time in mason jar salads like this beautiful one from Lauren Caris Cooks. She uses the same font as our “Rebelle” logo so we like her even more.
