Liverpool was recently in the Champion’s League Final vs Real Madrid (we don’t want to talk about it) so we had some friends over to watch the game. I have such good intentions about a big feast and then the reality of life with a baby hits me and I just pull things together last minute. I was hoping to have more “English themed” snacks like my delicious scones with tea and jam but time ran away from me and I just managed to do cucumber sandwiches and my favorite decadent chocolate cake. Luckily friends brought chips + salsa as well as some muffins so we were good on the snacks side.
I’m not sure why we look so happy considering Liverpool lost but at least we lost in style.
I asked hubby to get vegan cream cheese from the grocery store that morning but alas it was out of stock so I just used vegan mayonnaise instead. I would love to try it again with the vegan cream cheese and when I do, I’ll let you know if it’s any better.
Vegan Cucumber Sandwiches

Ingredients
1 loaf white bread de-crusted
1 English Cucumber
vegan mayonnaise
dill chopped finely
chives chopped finely
salt + pepper to taste
Instructions
Cut the crusts off the bread and spread the vegan mayonnaise on both sides.
Cut very thin slices of cucumber and lay on the bread. Sprinkle the sandwich with chopped dill and chives then grind salt and black pepper to taste.
Cut the sandwiches into triangles and serve.
We love having people over but we are so bad at planning in advance. Anyone else with me on that? We always get to the weekend and are kicking ourselves for not organizing a casual get together with friends. I know most people, especially families, often have very full calendars especially in the Summer so we really need to get into gear and invite people over more! These are a great snack and perfect for little hands too 😉
