I didn’t have pizza for quite a while because I couldn’t find a good vegan cheese substitute but what’s a Friday night-in without a pizza and a movie? Earlier this year my mom bought some Trader Joe’s Vegan Mozzarella shreds and I finally found an option that I enjoyed in small amounts. So, I either use the Trader Joe’s Vegan Mozzarella shreds or I make my own cheesy drizzle that takes 2 minutes. The recipe is included below.
My hubby and I are busy watching the X-Men series in chronological order and I am so grateful that we have similar movie taste. I mean seriously, imagine if he loved horror movies? What would we do? I can’t stand horror, I can barely watch psychological thrillers now that I’m a mom (something weird happened to me and I have zero tolerance for scary things) so what would I do, read a book in the other room while he watched by himself? Luckily, we love criminal dramas (again not too violent or scary), anything sy-fy, action + adventure and the occasional comedy or rom-com thats not too below-the-belt.

Veggie Pizza with Vegan Cheese Drizzle

Ingredients
For the pizza
3 tsp olive oil divided
1/2 onion peeled and diced
1 garlic clove peeled and minced
1/2 punnet mushrooms sliced, 4 oz (about 100g)
4 mini vegan sausages
1 pizza dough I used one from Publix
1/2 cup tomato basil pasta sauce
handful baby spinach
2 artichoke hearts sliced finely
2 TBSP sliced olives
1/2 cup pineapple slices
For the vegan cheese drizzle
1/4 cup veganaise
1/2 TBSP nutritional yeast
1 TBSP pea milk
1/2 tsp lemon juice
Instructions
For the pizza
Preheat the oven to 425F and place the pizza dough on a pizza baking sheet.
Add 1 tsp olive oil into a pan and sauté the onions for 5-8 minutes. Add the garlic for the last 30 seconds. Remove from heat.
Add 1 tsp olive oil to the pan and sauté the mushrooms until golden brown on both sides. Remove and set aside with the onions.
Add 1 tsp of the olive oil and sauté the vegan sausages until browned on all sides. Remove and cut into round slices.
Layer the pasta sauce on the pizza base and add the spinach, onions + mushrooms, sausages, artichoke hearts, olives and pineapples.
For the vegan cheese drizzle
Combine the veganaise, nutritional yeast, pea milk and lemon juice in a small cup or bowl. Mix together and drizzle over the pizza.
Bake pizza for 18-25 minutes until crust is fully cooked. Enjoy!
