Rich Chocolate Brownies + Chocolate Recipe Roundup

Hi everyone! I hope you are doing well and that you are taking it slow this holiday season. We are off to Pennsylvania this week to celebrate Christmas with my Dad’s side of the family (so sad you can’t make it Dad – I know you are reading – you are one of my biggest supporters, thank you!) and if I could make all of these for everyone, I would! You will love each one of these recipes!

My mom made this recipe of Rich Chocolate Brownies growing up and I had no idea it was actually passed down from my Granny Hart so it makes them even more yummy and special. We are not sure where she got it from, so if it’s the same as one of yours then please let me know. I obviously like giving credit where credit is due.

I often ask myself why it took me soooooooo long to be interested in baking and cooking since my mom was such a good cook and baker? She made the most amazing home cooked meals and desserts from scratch, and I was not appreciative of them as a child and teen, sorry Mom! But I am now! Thank you Mom x

This rich chocolate brownie recipe wowed all of my friends and I’ve never made it before because I didn’t eat eggs, and I still don’t bake with eggs because the alternatives like flax seed always do the trick, but I decided to give this recipe a go.

The first batch was a TOTAL FLOP! I forgot the oil, not like there are a lot of ingredients so oops, and there is quite a lot so the batch was as dry as tree bark. So, don’t skip any ingredients and they will turn out beautifully!

Rich Chocolate Brownie Recipe


Rich Chocolate Brownies

Delicious fudgy brownies prepped before the oven even preheats, and eaten before it cools down.

Ingredients

  1. 2 cups all-purpose flour

  2. 11 TBSP cocoa just under 1 cup

  3. 1 tsp baking powder

  4. 1½ tsp salt

  5. 4 eggs

  6. 2 cups white sugar

  7. 1⅓ cups oil

  8. 2 tsp vanilla essence

  9. chocolate chips optional topping

Instructions


Preheat the oven to 350°F (180°C).


In a medium bowl, combine the flour (sifted), cocoa (sifted), baking powder and salt. Mix and set aside.


In a large bowl, beat the eggs well. Add the sugar gradually and mix in the oil and vanilla.


Add the dry ingredients to the wet ingredients and mix well. A spoon or spatula will do the trick.


Lightly spray a 9x13in (33 x 23cm) pan with oil and pour batter in. Option to sprinkle a handful of chocolate chips on the top before baking. Bake for 20 – 30 minutes or until a toothpick inserted in the center of the brownies comes out clean.

Notes

  1. Use a little less flour and ½ tsp of baking powder for more fudgier brownies.

  2. This recipe can be halved for a 9×9 pan.
