I love reflecting back on a year and even though it really feels like I haven’t achieved much in the last two years apart from keeping a small human alive, I have had fun sharing recipes and ramblings with you.

#9 Easy French Toast Recipe

I make French Toast on a weekly basis and freeze the leftovers so I can take one (or two) out to have for a quick breakfast for our family. Our toddler loves this recipe because of the perfect ratio or cinnamon and egg. Enjoy! CLICK HERE FOR THE RECIPE.

#8 Veggie Lasagna Recipe

This lasagna is so tasty because of the creamy vegan sauce. It makes a big dish that can be for a dinner party, used as leftovers or even to freeze for another time. How many veggies can you cram between a wrap? Well, the answer is as many as you want! These veggie-packed quesadillas are so quick and easy and pack on the flavor! #5 Vegan Berry Protein Smoothie

I loved smoothies until I learned about Acai Bowls and have literally been eating them for lunch everyday. Because of the granola and extra fruit, I think they are more filling than smoothies but this isn’t an add for açaí bowls…oops! CLICK HERE FOR THE RECIPE.

#4 Apple Bran Muffins

You guys are my people! In my opinion, anything chocolate-y (and wait till you see the next post) has to be in the top three and you guys showed me that you like chocolate just as much as me! These were my favorite to photograph! These coconut bounty balls are very light (unless you eat all of them in one go!) and a lovely treat for the whole family or an after-the-kids-have-gone-to-bed indulgence. CLICK HERE FOR THE RECIPE.

#1 Ikea Hack: Toddler Kitchen Helper Stool

Honestly, I wish we could have afforded one of the real stools that are specifically made safely for toddlers, but alas, we decided to make this instead. I was very honest in the post saying that Oliver has fallen out of this twice and that you need very strong parental supervision (hence my hand on Oliver). BUT, having said that…this stool is the most used item in my kitchen. Oliver loves helping me prepare the breakfast every morning, make açaí bowls at lunch time and he also likes to help me dump the washing in the washing machine standing on this stool. My advice…invest in a ‘proper’ one it will be well worth it!
